Tuscan veggie lentils soup

I came across this recipe on the Yummy Mummy Kitchen blog. I arrange it so it fits with my Italian broth... and guys... this is simply delicious, hearty, comforting, and flavourful!

Portions: 8


1 onion, diced

1 cup carrots, diced

1 cup celery, diced

2 medium-sized potatoes, diced

4 cloves garlic, minced

1 1/2 jars of Italian broth

2 cups water (if you like your soup more liquid)

1 teaspoon dried thyme

1 teaspoon dried basil

1 teaspoon dried oregano

1 pinch of red pepper flake (more or less to taste)

2 cups green lentils, rinsed

3-4 cups of kale or spinach

Parmesan and croutons for garnish



  1. In a large stock pot, heat 2 tablespoons olive oil over medium heat. Add onion, carrots, celery, potatoes and saute until starting to soften. Add garlic and saute for another minute
  2. Add the broth, herbs and pepper flakes, and bring to a simmer
  3. Stir in lentils, cover and let it simmer for about 45 minutes
  4. Add the water if needed
  5. Stir in kale (or spinach) and season to taste with salt and pepper
  6. Serve in bowls, garnish and enjoy!
