Miso, rutabaga and apple soup

I found that recipe somewhere on Pinterest (ahah!)… Although, the one I found was full of heavy cream and butter with no spices… I thought that my stomach won’t like it… So here’s my recipe for a perfect-comforting-salty-and-sweet soup of the week!

Portions 4-6

 

Ingredients

3 tablespoon olive oil

1 cup onion, minced

1 cup rutabaga, diced

1 cup butternut squash, diced

1 cup sweet potato, diced

1 cup carrot, diced

1 cup apple, diced

1 jar Miso broth

1/4 cup maple syrup (more or less to taste)

1 pinch Cayenne

Salt and pepper to taste

 

Directions

  1. In a saucepan, heat oil over medium heat and add onion, rutabaga, butternut squash, sweet potato, carrot, apple and stir for 3-4 minutes
  2. Add broth and bring to a boil, reduce the heat and let it simmer until the vegetables are tender (20 minutes)
  3. Turn off the heat and blend until smooth and add maple syrup and Cayenne pepper
  4. Season to taste with salt and pepper
  5. Serve and enjoy!
