Broccoli & parmesan soup

This is a great soup to eat broccoli without eating broccoli… if that makes sense… For a vegan version, omit the parmesan!


Portions : 4 to 6


3-4 tablespoon olive oil

1 kg (8 cups) broccoli, diced

2 garlic cloves, minced

1 L of Tata Soupe miso broth

3/4 cups grated parmesan

1 lemon, juiced

Salt and pepper to taste

Croutons and fresh parsley to garnish



  1. In a large saucepan, heat olive oil over medium heat and saute the broccoli 3 to 5 minutes
  2. Add the garlic and stir for 1 minute
  3. Add the broth, stir well, cover and let it simmer for 30 minutes (or until the broccoli is tender enough)
  4. Remove the saucepan from heat and mix the soup until smooth
  5. Stir in the parmesan
  6. Season to taste with lemon juice, salt and pepper
  7. Serve in bowls, garnish and enjoy!
